The RAW series is a pure, single-varietal expression of the Greek vineyard. Two iconic varieties of Northern Greece — Xinomavro and Roditis — are vinified with zero intervention, allowing the true character of the terroir and the cool-climate origins to shine through. In fact, our challenge is to use nothing that our grandparents wouldn’t have used.
Focusing on old vines and cooler microclimates, RAW wines are born from the wisdom of past generations and the knowledge of the new ones. By keeping a low profile in the winery, we let each variety speak with clarity and precision.

RAWditis
A radical take on a classic variety.
RAWditis is a natural masterpiece that captures the pure authenticity of Roditis with zero intervention — nothing added, nothing taken away.
The majority of the grapes are primarily sourced from a 90-year-old vineyard in the Amyndeon region. Each grape is carefully hand picked, berry by berry, and spontaneously fermented in clay amphorae. It then undergoes 28 days of skin contact, followed by 6 months of aging on its fine lees in clay amphorae, with no sulfites or additives of any kind. Bottled unfiltered, to maintain its natural character and elegance.

XinomavRAW
The true power of a grape with history.
The vinification of XinomavRAW revives traditional techniques from the previous century, blended with modern know-how and expertise. The grapes are gently crushed by hand, with a small percentage left whole-bunch to enhance complexity.
Fermentation is slow and spontaneous, using wild yeasts, with vinification in clay amphorae and concrete tanks, accompanied by a light, restrained extraction. The wine is then aged for 6 months on its fine lees in amphorae and concrete tanks — without sulfites or any additives — preserving both the raw character and refined elegance of the grape.
